Asian Noodle Salad with Prawns
Butter lettuce
Rice noodles
Sauce:
4 garlic cloves
1 inch of fresh ginger
1 cup white vinegar
1 ¼ cup sugar
1/2 cup honey
1/2 lemon, zest and juice
1/4 cup Kikkoman soya sauce
1 tbsp ketchup
1 tbsp garlic powder
1 tbsp ginger powder
1 tbsp paprika
1/2 tsp hot chili flakes
Pinch of cayenne
Pinch salt and pepper
Make the sauce by cooking the fresh garlic and ginger in a touch of oil until soft - then add everything else and bring to a boil for 5 minutes. Reduce and let simmer for 10 minutes. Thicken with some diluted cornstarch in a touch of water.
Cook the noodle according to the package.
Sautee your prawns in a pan and cook until done!
Break the leaves of lettuce in a large bowl, add your cooked noodles and top with your cooked prawns. Drizzle some sauce on top of your salad and voila!
