Basic Chocolate Truffles

1.2 kg of dark chocolate 65% to 70% minimum
3 cups cream 33%


orange 1 tsp zest
mint extract 4 drops
almond extract 5 drops
cinnamon 2 tsp

Bring the cream to a boil add chocolate and mix until smooth.

Separate in four bowls flavour the way you want and refrigerate for 2 hours

Make balls and toss into cocoa powder!
