BC Apple & Cherry Stuffed Crepes

Crepes:
2/3 cup milk
1 egg
1 tbsp butter
2 tbsp sugar
1/3 cup flour
Orange zest

In a large bowl mix the egg and sugar together.
Add the milk and mix well.
Add the flour and keep in mind that you may require a touch more of flour depending on which brand you use, that's normal - mix until smooth and you can use an electric mixer if you wish.
Add your orange zest and you are ready to start cooking the crepes. Preferebly in a non-stick pan as thin as possible.

Filling:
3 to 5 apples
2 cup Bing cherries, fresh, defrosted or can
½ cup brown sugar
1 cup water
A touch cornstarch if needed, diluted in cold water

Peel your apple and chop into wedges.
In a large pot add your apple, cherries, water, brown sugar and let simmer until the apple are tender but not all soft and mushy!
Add a touch of cornstarch if needed… I like to get a nice gooey texture, not runny!
Stuff your crepes with the filling and top with the yogurt of your choice. I chose Vanilla yogurt "Activa" and it worked great.
