This is a classic dessert all across France, and we are lucky enough to have cherries available right here in the Okanagan, so we can make this classic come to life in our kitchens.
500 g Black Cherries
100 g Flour
125 g Sugar
4 eggs
1 tsp Vanilla extract
250 ml Milk
2 1/2 tbsp Butter, melted
A pinch of Salt
Wash and de-stem the cherries. (No need to remove the pits, as it will add flavour)
In a large bowl, beat the eggs till frothy.
Add the sugar and salt and beat again.
Gradually add the flour while still beating to avoid lumps.
Add melted butter and mix.
Lastly, stir in the milk.
Butter a baking dish (shallow preferably, but casserole type will do) then pour in the cherries
Then pour the batter over the fruit.
Bake at 375F for 45 minutes. Upon removing from oven, sprinkle 1 tsp sugar over the top and serve warm.
