Chocolate Banana Cream Pie

This dessert will seal the deal after any meal... It's not too fancy, it's simple to prepare,and the flavour and texture are out of this world.

The Crust:
1-1/4 cup Oreo Crumbs
1/4 cup melted butter
2/3 cup good quality chocolate chips

The Filling:
2/3 cup sugar
1/4 cup cornstarch
1/2 teaspoon salt
4 large egg yolks
3 cups whole milk
7 oz good quality dark chocolate, melted
2 tablespoons unsalted butter, softened
1 teaspoon vanilla
2 medium size banana

The topping:
1 cup chilled heavy cream
Sugar to taste
1 cup Coolwhip
Vanilla to taste
1 small banana

Making the crust: Follow the directions on the box...
Put oven rack in middle position and preheat oven to 350F. Stir together crumbs and butter and press on bottom and up side of a 9-inch pie plate.
Bake until crisp, about 14 minutes, take it out of the oven. Add the chocolate chips and completely cool on a rack.

Making the filling: Whisk together sugar, cornstarch, salt, and yolks in a saucepan until combined well, then add milk in a stream, whisking. Bring to a boil over moderate heat, whisking non stop, then reduce heat and cook 1 minute (filling will be thick by then).
Take it off the stove and force the filling through a fine-mesh sieve into a bowl. Whisk in chocolate, butter and vanilla until everything is melted.
Add sliced bananas to cover the bottom of the cold crust, and while the filling is still warm, spoon the filling into the crust, then chill the pie for at least 4-6 hours.

Making the topping: Whip the cream 2/3 of the way, then add sugar and vanilla and finish whipping cream all the way.
Fold in the Coolwhip at the end with a spatula.
Using a piping bag, decorate your pie with the whipped cream and top up with fresh banana slices right before serving so they don't get all brown.
